Meet the Waldorf Astoria’s multiethnic Japanese-Peruvian chef, Cristian Asato, at UMI. Having studied at the International Sushi school Tokyo, he serves exquisite and authentic Japanese cuisine straight from his kitchen. You’ll enjoy the exciting menu that includes a range of extraordinary sushi, sashimi and nigiri, zensai appetisers, noodles and soups, tempura and fried agemono and delicious signature main courses, including black cod miso and seabass yaki yuzu fu-mi with yuzu sauce.
For something a bit special, the perfectly considered kaiseki five-course tasting menus are always a firm favourite for those who appreciate the best of Japanese Cuisine. Asato acquires the freshest seafood directly from the famed Toyosu market in Tokyo. It doesn’t get more authentic than that! UMI Seemingly glows with the metal-studded interiors complementing the dimmed lighting that transports guests to a piece of Asia whilst retaining a sense of balance. Outside is an exotic balcony bordered by vibrant Japanese gardens.
